About the Achievement

A Proud Milestone in Practical Learning

In a remarkable demonstration of patience, scientific discipline, and hands-on learning, the B.Sc. (Hons.) Agriculture 4th Semester students of Career Point University, Kota have successfully prepared and completed the ageing of fruit wines — fermented fruit juices — as part of their Horticulture course curriculum.

After more than 7 months of dedicated hard work, the students completed the entire journey from fresh fruit selection to quality wine ageing, covering every critical step of the enological process. The wines were preserved using organic, plant-based preservatives, ensuring natural preservation while maintaining quality and health-friendly characteristics.

The Process

From Fresh Fruit to Aged Wine — Every Step Mastered

Every step was meticulously carried out by the students, providing invaluable hands-on experience in Enology:

Fruit Selection & Processing
Careful selection of fresh, ripe fruits followed by washing, peeling, crushing and juice extraction using standard post-harvest techniques.

Brix Analysis
Sugar content measured using Brix analysis (refractometer readings) to determine initial sugar levels critical for controlling fermentation.

Fermentation
Juices inoculated with yeast cultures and allowed to undergo controlled alcoholic fermentation with regular monitoring of temperature, pH, and Brix.

Filtration
Systematic filtration to remove sediments, clarify the liquid, and improve visual appearance, texture, and overall wine quality.

Organic Preservation
Wines preserved using organic, plant-based preservatives ensuring natural preservation while maintaining quality and health-friendly characteristics.

Ageing
Wines aged over several months allowing complex flavour compounds to develop, acids to mellow, and quality profile to mature — completing the 7-month journey.
